The Falling Leaves and Cooler Weather Calls for Soothing Soup


This week it was time to light up the logs in the fireplace and snuggle up with a cup of William Sonoma Hot Coca! There are so many things that make me love the fall weather. Every walk I take, I can see God's handiwork as each variety of trees paint our landscape differently from what we see in the summer. The really beautiful thing is that whether you live in the north, south, east or west part of the US, you have a different story about the beauty of fall. In Tennessee, it is time to plant the fall bulbs that you ordered, deadhead the hydrangeas, and rake or blow the million leaves in your yard.


I also love this time of year, as I begin to cook some of my favorite soups. Yesterday, I decided to make my cream of chicken soup. You may have read my post for chicken and wild rice soup which is also delicious in the fall and wintertime. Some people love a simple soup without all the vegetables, rice or noodles. If you are among that group, this is the soup for you! The recipe serves four which is perfect for couples or dinner with friends. If you have a family with more than four, simply double this recipe. It is easy and quick to make...add your favorite crackers or make a grilled cheese sandwich to go with the soup and you are all set for lunch or dinner!




CREAM OF CHICKEN SOUP

READY IN: 1hr 30mins SERVES: 4

INGREDIENTS

6 tablespoons butter

1⁄4 cup celery, chopped fine

1⁄4 cup onion, chopped

1 teaspoon minced garlic

1⁄3 cup all- purpose flour 1⁄2 cup milk 1⁄2 cup light cream 3 cups chicken broth

1 cup cooked chicken, chopped

1⁄4 teaspoon white pepper

1⁄4 teaspoon black pepper

1⁄2 teaspoon salt

1⁄8 teaspoon ground cayenne pepper (or to taste)

DIRECTIONS

Melt butter in large heavy saucepan.

Add onion, celery and garlic and saute until soft.

Add flour mixing well.

Cook for 3-4 minutes.

Add milk, cream and broth mixing well.

Cook and stir until mixture thickens and comes to a boil.

Reduce heat and stir in chicken and remaining seasonings.

Adjust seasonings to taste. Cook over low heat 2-3 minutes.
