A Yummy Blackberry Cobbler


Blackberries are in season and so it is the perfect time to make a Blackberry Cobbler! This is a delicious recipe by Robyn Stone. I have made it multiple times and everyone loves it. This classic dessert has a lattice topping and pastry dumplings. Don't let this scare you away from creating this outstanding dessert!


Prep Time 5 mins

Servings 8-10 depending on the size slices


Ingredients

For the Crust:

2 cups of all purpose flour

12 tablespoons of butter

1/2 cup of ice water


For the Cobbler

3 cups of blackberries cleaned

1 1/2 cups sugar

6 Tablespoons butter

1 1/2 cups water


Instructions for the Cobbler Crust:

Step 1: Chill mixing bowl and pastry cutter in the freezer for about 15 minutes prior to making the crust.


Step 2: Cut the butter for the crust into the flour with a pastry cutter. Slowly incorporate ice water just until the dough begins to form.


Step 3: Pour dough onto parchment paper, divide into two circle that you will flatten into 2 discs. Wrap tightly in plastic wrap and placed in the freezer to chill prior to using.



Instructions for the Cobbler


Step 1: Combine blackberries, sugar, butter, and water in a heavy-bottomed pan.


Step 2: Bring to boil over medium heat and cook for 20 minutes. Berries will be soft when pressed against the side of the pan with a spoon. The blackberry mixture will also begin to thicken and become syrupy.


Step 3: Preheat oven to 425º F.


Step 4: Remove pastry discs for cobbler crust from the freezer and roll. Cut 1/2" strips in both portions of the dough. One half will go into the blackberry mixture for dumplings. The second set of strips will go on top.


Step 5: In one half of the dough, cut strips again to form individual pieces for dumplings.





Step 6: Drop the dough pieces into boiling blackberries and occasionally stir gently to make sure all dumplings are cooked, about 7 minutes.









Step 7: Remove cobbler pan from heat and place the second half of the dough in a lattice pattern on top of the blackberries. Place pieces of butter on top of the lattice crust and sprinkle with sugar.

Step 8: Place into oven and bake for about 20 minutes or until crust is lightly browned.


Step 9: Remove from oven and allow it to cool for at least 10 minutes before serving.
