The Perfect Meal in the midst of winter...

PORK TENDERLOIN


I love this pork tenderloin recipe. Pork tenderloin usually comes wrapped in pairs. This way, if you have a larger family, you can use both loins at the same time with this recipe. If you have a small family with 2 to 3 people, you will want to freeze one loin and cook the other one.


I find that we often believe that we will eat everything that we are cooking and when we make a large amount ,it is often left in the refrigerator because we're eating other things and we don't care to eat the same thing twice in the same week!


This is an easy recipe even for those who are growing their cooking skills. It is a great entree for a group of friends coming to dinner. I will sometime sauté mushroom in white wine and add them to the sauce.


Recipe

Yields: 8 servings if using 2 tenderloins

Prep time: 10 MINUTES 

Cook time: 30-40 MINUTES

Resting time: 10


Ingredients

1 Package Pork Tenderloin - pack of two tenderloins

1 tbs. olive oil

Spice Rub

1tsp. paprika

1 tsp garlic powder

1/2 tsp onion powder

1 tsp. fresh or dried thyme (chopped)

1 tsp, fresh or dries rosemary

Salt and Pepper to taste

Dijon Mustard - add on top of the spice rub

4 garlic cloves minced

1tbs. Dijon mustard

1tbs. olive oil

Final Step

1/4 cup honey - drizzle this on top of the Dijon Mustard mix


Instructions

  • Preheat oven to 375 degrees. Add foil to pan, and place the two pork tenderloins on top. Lightly pray with oil to hold the spices.

  • In a small bowl, whisk together the Spice Rub. Rub over the tenderloin. 


  • Next add the spice Rub across the tenderloin and follow with adding the honey drizzle on top which creates a super yummy glaze on top.

  • Insert meat thermometer and bake until it reads145˚F


  • Serve with sauce from the pan drizzled over the top. Enjoy!
